A Deconstructed Bruschetta


Being away for the weekend without all of the usual cooking tools, serving items, and utensils can pose some problems when asked to bring an hors doeurves for 40 people to a remote location involving a hike.


Inspired by a recipe in the August 2013 Bon Apetit, I grabbed a couple loaves of rustic french bread, burrata cheese, basil, and olive oil. I gave the basil a rough chiffonade, sliced the bread, broke apart the burrata to expose the curd and slapped it all on a(n) (ugly) aluminum sheet that could be covered and easily transported.



It was a hit.

Although I realize this is not high end cuisine, it was beautiful with minimal effort. All enjoyed al fresco at The Little Chapel by Mammoth’s Twin Lakes. A glass of Piper Sonoma’s pink sparkling wine was a perfect accompaniment!
