Baked Egg w/ Prosciutto


Baked eggs are a harried mother’s answer to breakfast on a school morning. With little assembly they can be baking while you are screaming gently waking your children from slumber. As they are baked individually you can make as many as you need, and in less than 20 minutes you have a nutritious protein filled healthy breakfast.

1 egg per ramekin
1 slice prosciutto (this is domestic)
1 1/2 T. grated parmesan
1 T. heavy cream, or any milk-it will just be less creamy
S & P to taste

Spray each ramekin with a cooking spray, or wipe with softened butter. Crack an egg into each dish. Layer slice of prosciutto loosely over egg. Pour over cream and sprinkle with the cheese. Salt and Pepper to taste.

Bake at 375 for approximately 12-15 minutes depending how cooked you like your yokes.

These can be made any variety of ways, with crumbled bacon, sausage, cheddar cheese, jack cheese, etc. Fresh herbs are also a great addition. It’s a very forgiving recipe adapting to any taste!

With the extra time you have, you can look for the missing shoe, homework, library book… but maybe that’s just in my house.
