As promised, more figs. Yea.
I really love to make jam. Especially this jam. The menage a trois between the fig, strawberry and rosemary is magic.
This is how it starts:
4 lbs of Black Mission Figs, quartered
1 lb Strawberries, halved or quartered, depending on size
In a pot, with a wide surface, simmer figs and strawberries with 3 cups sugar, and a few sprigs of fresh rosemary, with 3 tbsps. pectin for 30-40 minutes. Test the mixture for thickness by dripping onto a chilled plate,
Place jam in sterilized jars and add to a water bath. Process for 15 minutes. Remove from the bath and within the next 12 hours you will hear the pop as the jars seal. Love that sound! Makes me feel so accomplished. Ha.
